
I am not one to make fancy cakes but since I have so many mangoes, I was looking for new ways to use them up.
This recipe was fun to make and they were a big hit. It was nice to be able to make a fancy dessert with relative ease.
I thought lamingtons was just a fancy name for this recipe but when I googled it I found that lamingtons are actually part of Australian cuisine. I can’t wait to try the traditional version with chocolate rolled in coconut and some fresh strawberry jam!
