I had fun with this cookie and it was delicious! I loved the rhubarb filling which isn’t overly sweet with the crunch of the cookie.
I finally had a chance to start reading my new book Sweet by Yotam Ottolenghi & Helen Goh. The recipes look easy to do and sound very tempting. I lucked out as it is rhubarb season and I was able to score some from Whole Foods!
This is not my typical cookie to try as I can’t be bothered with fillings or icing but I must say it was worthwhile. I can’t wait to try some more from this book!
