I love holiday traditions. The crepes suzettes are one of my favorites. Not sure if it is the excellent orange flavor with a hint of triple sec or the fact we light it on fire. It is a perfect Florida holiday tradition since it uses fresh oranges.
My husband started this family tradition when he was younger. The first time I had these was when I visited my in-laws in Florida for Christmas. I made them up north, but somehow it never seemed the same.
We would have a lazy Christmas morning opening presents, then stopping for crepes suzettes. Afterwards, we will sit outside enjoying the Florida weather.
They are relatively easy to make, and the crepes can be made the day before.
Not sure where the recipe came from but my mother-in-law modified it to incorporate more orange juice.
Crepes:
- 3 eggs
- 1 Cup Milk
- 3/4 Cup Flour
- 1 Tablespoon Sugar
- 1/4 Teaspoon Salt
Beat eggs and milk. Mix in flour, sugar and salt. Let mixture rest. Cook Crepes and fold in quarters
Sauce:
- 1/2 Cup Butter
- 2/3 Cup Sugar
- 1 tsp Orange peel
- 1/3 cup Orange Juice
- ¼ cup orange liqueur such as triple sec
- 1 tsp lemon juice
- ¼ cup or so bandy for lighting
Melt butter and add sugar and orange peel. Then add orange juice, orange liqueur and lemon juice. Cook until mixture bubbles. Place crepes in pan and coat with sauce. Quickly put in a dish, pour brandy and light.
