Summer is coming to an end and with it dining outdoors. While it might seem time-consuming to bring dinner outside, I find it very relaxing and a great way to unwind. Our backyard is teeming with the various wildlife, and they always put on a great show.
Several years ago I purchased a small table and chairs from Costco. It was the best purchase ever; we have spent many meals outside enjoying the evening air, relaxing and reconnecting. We have such a variety of wildlife that you never know who will drop by and entertain you.
Outdoor dining has been a long-standing tradition in my family, so while up north we were able to catch a nice evening out and enjoyed the last of the summer nights. As a special celebration, we made wild salmon with leek and potatoes.
Baked Salmon:
- Wild salmon steaks
- Thinly sliced leek
- White wine hopefully you will have some left over to drink with dinner
- Salt & pepper
- Dill
- Lemon slices
- Lots of butter
Cover dish with foil and bake at 375F (I think that is what temperature we used) for 30 to 45 minutes depending on how thick the steaks are cut.
