Okra with a Crunch

Okra is a very strange vegetable. It is a slimy pod with tiny crunchy seeds that reminds me of roe (salmon eggs) but has beautiful flowers that resemble a hibiscus flower. Okra is not one of my favorite foods, but since my husband was cooking, I thought I would give it another chance.

My husband likes to experiment with different foods and found this cool recipe called Turkish Chicken and Okra Casserole. The okra turned out nice and crisp not mushy like in a previous attempt. The recipe has a lot of flavor and made tons of leftovers.

My next year’s summer gardening list is expanding of new cool things to try out. I have never tried growing okra, but my neighbour tried, and it had the prettiest flowers. I can’t wait to get some pictures of the growing process to add to my garden collection.
