This is the perfect solution to the stragglers as they ripen. The dough can be made ahead of time and kept for several days. They are a hit with guests and co-workers.
They are very easy to make and are the perfect snack size. I would recommend using the firmer mangoes as they are easier to slice thinly and the pastry won’t get so soggy. A co-worker liked the pastry so much that she used it with other fruits as well.
