I did it! I went to the other side, the land of no quantities. I made lemon sole en papillote without any written recipe. It was scary but exhilarating.
Roger decided to buy some sole, and he was kind enough to send me a YouTube link to some guy called Gordon Ramsay and prints out a few different recipes. I guess I am cooking. The video looks intriguing, as I have never used parchment paper before. I decided that this the perfect recipe but wait where is the recipe? It’s not in the description, nor on a slide in the video, it’s nowhere to be found. WHAT?
Well, I took the plunge it seemed simple enough I couldn’t really screw it up right? Never having used parchment paper for steaming added another layer of anxiety. I did write down the ingredients, but in all the confusion I forgot the garlic. Roger got me a cup of wine and said I probably didn’t need it all. I’m like okay but a bit skeptical thinking the parchment paper will leak, so I put it all in.
Dinner was a huge success; despite Roger asking for the leftover wine to drink with his meal. Oops!, well, um, I used it all. Oh, well you didn’t need to, you just needed enough for it to steam. Well, I know that now, the parchment paper didn’t leak I sealed it well.
Roger was super surprised that I made it without the ingredients amounts. I kind of surprised my self but it seems a year for first so why not? Little did he know I really wanted to try a parchment recipe.
