I was excited to try my fresh homemade ricotta cheese in handmade ravioli, smothered in a sweet tomato sauce. I have always wanted to make ravioli; in fact, I have had the ravioli maker for at least ten years but never got around to trying it out. Recently I finished an online Pasta Making Class that I found on Instructables by Paige Russell. It didn’t look hard so I thought I would give it a try.
It was a lot of fun, and with anything new, you learn by experimenting. My pasta dough wouldn’t roll past a five without becoming a goopy mess, so it was a little on the chewy side. I think my dough was a little too wet. Next time I will have to try Paige’s pasta recipe or dig out my old ones.
At first, I resisted using the ravioli maker, I really wanted to try out the ravioli-cutting wheel, but for whatever reason, my dough wasn’t cooperating resulting in gaps. The ravioli maker was easier for me as I could add more pressure with the rolling pin resulting in a better seal. No loss as now I can make a pie for experimentation purposes, of course, to try the ravioli-cutting wheel on the crust!
I did use Paige’s Ricotta Ravioli filling and the Classic Tomato Sauce recipes. The Classic Tomato Sauce was also perfect on regular pasta. The Pasta Making Class can be found at https://www.instructables.com/class/Pasta-Making-Class/
