There is something comforting about freshly baked pancakes wafting through the house with a hint of coffee on a crisp morning. It reminds me of an old family friend whose house always smelled wonderful especially in the morning. This place was special to me. Brimming with fragrance and intertwined with a sense of peace and oozing with creativity. She was a weaver. I said one day that will be me!
This morning I found myself outside basking in the early morning rays listening to a choir of songbirds sipping tea and biting into a crisp, and gooey buttery pancake. Yes crisp on the outside and gooey in the center. Ahhh I let all my troubles slide away as I enjoy the moment and just be. This is a perfect pairing for inspiration. My journal happened to go out with me so I indulged in some creative writing time. What a great way to start the weekend.
I love pancakes and have quite a few keepers already but I will definitely be adding this one to my recipe notebook. I paired it with my first batch of elderberry syrup I made the other day. Fortunately for me, I see more taste testing opportunities in my future. The elderberry syrup wasn’t quite there yet.
